IN THE POT | ALLERGY FRIENDLY CARROT COOKIES

Recipe Carrot Cookies

I’m always on the lookout for healthy alternatives to commercially prepared foods and these cookies fall into that category. They’re a great snack for kids that may have allergies to dairy, nuts or eggs as there’s none of those in here.

I made these up in about 30 minutes and they were such a handy snack to have on hand. The little man loves an afternoon snack and these made me feel guilt free about indulging him.

A friend suggested using Golden Syrup as a binding agent, may just have to give that a whirl.

Carrot Cookies

½ cup white plain flour

½ cup wholemeal plain flour

½ teaspoon baking powder

½ teaspoon cinnamon

¾ cup rolled oats

1 cup carrot, finely grated

¼ cup sultanas

¼ cup apricots, finely chopped

2 tbsp desiccated coconut

1 tbsp chia seeds (optional)

½ cup apple puree/sauce

¼ cup vegetable oil

1. Preheat your oven to 180°C, or 160°C fan forced. Spray a biscuit tray with non stick spray or use a non stick baking sheet.

2. In a large bowl sift the flours, baking powder and spices.

3. Add the oats, carrot, sultanas, apricots, coconut, chia seeds (if desired) and apple puree to the bowl.

4. Stir through the vegetable oil until mixture is combined.

5. Using a spoon or your hands grab a tablespoon of mixture and roll into ball. Once rolled place the mixture on the baking tray. Repeat until mixture has been depleted.

6. Using the bake of a fork gently flatten each ball of mixture. Bake for 20 minutes or until slightly golden. Completely cool before eating.

Note: Will store in an airtight container for up to 1 week.

  1. I am so envious of your baking-these look delicious-I must find my baking gear and get back into it. I moved house recently and I have a teeny kitchen and so my baking stuff if still packed! :/

      1. Instead of vegetable oil, try coconut oil. It’s pretty nice. Personally I find as soon as you add wholemeal flour to anything, it sucks the taste right out of it.

        1. It’s one of life’s little mysteries… why does the stuff that’s good for you taste a bit bland sometimes? Coconut oil is a good call – will give it a bash.
