Tonight I made Donna Hay’s Chicken Spaghetti Salad and it was divine!  (Even if I do say so myself!)  Seriously this is not the sort of dish I would usually go for.  For a start I don’t really like basil as I find the flavour a little too strong.  But for some reason when I was flicking through the cookbook at lunchtime today this just grabbed me in all the right places.

If you’re looking for a cheap, easy, light and yummy dinner than give this a try!

Chicken Spaghetti Salad

Donna Hay’s Chicken Spaghetti Salad

400g (14 oz) spaghetti

2 teaspoons olive oil

3 chicken breast fillets

100g (3.5 oz) baby spinach leaves, roughly shredded

250g (8 oz) cherry tomatoes, quartered

sea salt and cracked black pepper

dressing

2 eggs

2 tablespoons Dijon mustard

4 tablespoons lemon juice

sea salt and cracked black pepper

2/3 cup (5 fl oz) vegetable oil

1/2 cup chopped basil

1. Cook the pasta in a large saucepan of boiling water until al dente. Drain

2. Heat a large frying pan over medium heat, add the oil and chicken and cook until golden and cooked through.  Cool slightly and then shred.

3. To make the dressing, process the eggs, mustard, lemon juice, salt and pepper in a food processor or blender.  With the motor running, slowly pour in the vegetable oil.  Stir through the basil.

4. Combine the chicken with the spinach leaves, tomatoes, salt, pepper and pasta.  Toss through the dressing and serve with crusty bread.

Serves: 4

  1. I love that you are posting recipes! I cannot cook but I really want to eat better this year (not packet meals and takeaway all the time) and this looks really good!

    1. It was so yummy and so simple. You should give it a go (oh and cheap too!). I’m really enjoying the cooking. I have gotten out of the habit over the past few years so it’s nice to be motivated again.

      I’m concerned this may just turn into a food blog 😉

  2. delicious! and what fantastic photos, food is hard to photograph, what settings are you using???

    1. I’m ashamed to say it but I’m just using the macro setting on the camera and taking one with flash and one without to see how it works out. I need to buy a new lens and tripod this year – would like to take better photos for the blog…

    1. You’re right… but that’s why I provided the recipe so the man in your life can spoil you by making it for you. It’s totally worth it!
