I stumbled upon this recipe for Healthy Fruit Slice when I was combing through Sally Wise’s book Sweet. I am a huge (both in love for and girth) fan of Sally Wise, her slow cooker recipe books have seen our house safely through many a winter and lazy days.

Anyways, back to the slice. I was looking for alternative to give to the Little Man instead of the store bought organic health bars we’ve been giving him so this recipe grabbed me straight away.
Now I had planned to share this recipe with you all a lot sooner, but you see this slice is so good it didn’t survive the first making… or the second… It is very yummy, and very moreish!
I got smart the third time and made double the batch and so I had some to snap a shot of. Now I tweaked the original recipe just a bit to utilize some of the stuff (nuts) we had in our pantry (although the version I photographed doesn’t have this tweak as we were out of nuts!). I added a little more honey and marmalade to compensate for the reduced moisture from the missing ½ cup of fruit.
(I think watching too many cooking shows is messing with my mind!)
Anyways, it’s still yummy and makes a slice that everyone in the family will want to eat (a lot)!
Healthy Fruit Slice
1 cup wholemeal self-raising flour
3/4 cup sugar
1 cup desiccated coconut
1 cup mixed dried fruit
½ cup chopped unsalted nuts
1 teaspoon ground cinnamon or mixed spice
1½ tablespoon marmalade
1½ tablespoon honey
90g butter, melted
1. Heat the over to 160C. Spray a 18 x 28cm slab tin with non stick cooking oil.
2. Mix all the ingredients together with a metal spoon. Spoon the mixture into the prepared tin and then use the back of the spoon to spread and press evenly into the tin. Bake for 25 minutes, or until golden brown.
3. Cut into squares to serve.
Note: You can be a little bit naughty and serve it crushed over the top of vanilla ice-cream… but you didn’t hear that tip from me!
